Tonkatsu

Boneless pork loin chops are pounded, dredged in flour, egg, and panko, and deep-fried until golden, then sliced and served with finely shredded cabbage, rice, and a quick tonkatsu-style sauce of Worcestershire, ketchup, soy sauce, and sugar.

- 300 gGreen cabbagevery finely shreddedBuy 0.67 lb
- 3 tbspWorcestershire saucefor the sauceBuy 1 bottle

Method
Cook the rice according to its package directions.
Pound the chops to an even 1.5 cm, nick the edges so they stay flat, and season with the salt and pepper.
Stir the Worcestershire, ketchup, soy sauce, and sugar together for the sauce.
Dredge each chop in flour, dip it in egg, and press it firmly into the panko.
Heat the oil to 340°F (170°C) and fry the cutlets two at a time until deep golden and cooked through, about 5 minutes per batch; drain on a rack.
Slice the cutlets into strips and serve with the cabbage, rice, sauce, and lemon wedges if using.
