Falafel

Soaked but uncooked dried chickpeas are ground with onion, garlic, parsley, cilantro, cumin, coriander, and cayenne, lightened with a little baking powder, shaped, and deep-fried until crisp and green inside, then served with a lemony tahini sauce. The chickpeas soak overnight, which is not included in the time.

Method
Pulse the soaked chickpeas, onion, 4 garlic cloves, parsley, cilantro, cumin, coriander, cayenne, and 1 tsp salt in a food processor until finely ground but not pasty; chill 30 minutes.
Stir in the baking powder and shape the mixture into small patties or balls.
Heat the oil to 350°F (175°C) and fry in batches until deep golden and crisp, 3 to 4 minutes; drain.
Whisk the tahini with the lemon juice, the grated garlic, the remaining salt, and cold water until smooth and pourable.
Serve the falafel with the tahini sauce, and tomato and cucumber if using.
