Chili con Carne

Ground beef is browned with onion, bell pepper, garlic, and jalapeño, then simmered with chili powder, cumin, tomatoes, beef broth, and kidney beans until thick.

Method
Brown the beef in the oil in a heavy pot, breaking it up; spoon off excess fat.
Add the onion, bell pepper, garlic, and jalapeño and cook until soft, about 6 minutes.
Stir in the chili powder, cumin, oregano, and tomato paste for 1 minute.
Add the tomatoes, broth, and salt and simmer, partly covered, for 45 minutes, stirring occasionally.
Add the kidney beans and simmer 15 minutes more; serve with cheddar and sour cream if using.
