Wedges of corn tortilla are fried until crisp and tossed in a salsa verde of boiled tomatillos, serrano, onion, garlic, and cilantro just long enough to soften at the edges, then topped with crema, crumbled queso fresco, onion, avocado, and a fried egg if you like.

Method

  1. Fry the tortilla wedges in the oil in batches until crisp and golden; drain and salt lightly.

  2. Boil the tomatillos, serrano, a quarter of the onion, and the garlic in water until the tomatillos turn olive green, about 8 minutes; drain.

  3. Blend with the cilantro, broth, and salt until smooth, then simmer the salsa in 1 tbsp of the frying oil for 5 minutes.

  4. Add the chips and toss for about 1 minute, just until coated and starting to soften.

  5. Top with crema, queso fresco, sliced onion, avocado, and fried eggs if using, and serve immediately.
