Chicken and Andouille Gumbo

A dark roux of flour and oil is cooked slowly, then onion, green pepper, and celery go in, followed by garlic, Cajun-style spices, broth, chicken thighs, and smoked andouille; the gumbo simmers for an hour and is served over rice with green onion and parsley. Okra is optional, and filé powder is omitted because it is not a canonical ingredient.

Method
Whisk the oil and flour in a heavy pot over medium heat and cook, stirring constantly, until the roux is the color of milk chocolate, 30 to 45 minutes.
Add the onion, green pepper, and celery and cook until soft, about 8 minutes, then the garlic for 1 minute.
Stir in the paprika, cayenne, thyme, oregano, garlic powder, black pepper, and bay leaves, then gradually whisk in the broth.
Add the chicken, andouille, salt, and the okra if using and simmer, uncovered, for 1 hour, skimming off the fat.
Meanwhile, cook the rice according to its package directions.
Remove the bay leaves, stir in the green onions and parsley, and serve over rice with hot sauce if using.
