Tavuk Göğsü

A Turkish milk pudding in which poached chicken breast is shredded into very fine threads and beaten into a thick, sweetened milk base. The pudding is chilled until set and dusted with cinnamon.
Ingredients
- 300 gChicken breast (boneless, skinless)one large breastBuy 0.67 lb
- 1 LWhole milkBuy 1 carton
- 200 gGranulated sugarBuy 1 bag
- 100 gRice flourBuy 1 bag
- 50 gCornstarchBuy 1 box
- to tasteGround cinnamonfor dustingBuy 1 jar
Method
Poach the chicken breast in simmering water until cooked through, then let it cool.
Shred the chicken into the finest possible threads, then soak and squeeze it in fresh water a few times to mute its flavor.
Whisk the rice flour and cornstarch with a little of the milk into a smooth slurry.
Heat the remaining milk with the sugar, whisk in the slurry, and cook, stirring constantly, until very thick, about 20 minutes.
Beat in the chicken until the pudding is smooth and slightly elastic.
Spread in a dish, chill for at least 3 hours until set, then cut into squares and dust with cinnamon.
