Thin strips of beef are coated in a spice rub of ground roasted peanuts, cayenne, paprika, ginger, garlic, and onion, threaded onto skewers, grilled over high heat, and dusted with more spice, then served with raw onion, tomato, and cabbage. The peanut spice (yaji) is made from ground roasted peanuts rather than pressed peanut cake (kuli-kuli).

Substitution
- Roasted peanuts in place of “Kuli-kuli (pressed peanut cake), ground”. Finely ground roasted peanuts replace kuli-kuli, which is not a canonical ingredient; they are oilier and less toasty, so the rub clumps a little more.
Method
Mix the ground peanuts, cayenne, paprika, ground ginger, garlic powder, onion powder, bouillon, and salt; set aside a quarter of the mix for serving.
Toss the beef with the oil and then the remaining spice mix, pressing it on; rest 20 minutes and thread onto skewers.
Grill or broil over high heat, turning once, until charred at the edges, 3 to 4 minutes per side.
Dust with the reserved spice and serve with red onion, tomato, and cabbage if using.
