Shepherd's Pie

Ground lamb is browned with onion, carrot, and garlic and simmered with tomato paste, Worcestershire sauce, thyme, and broth into a thick filling with peas, then topped with buttery mashed potatoes and baked until golden.

Method
Boil the potatoes in salted water until tender, drain, and mash with the butter, milk, and half the salt.
Brown the lamb in the oil, breaking it up; spoon off excess fat.
Add the onion, carrots, and garlic and cook until soft, then stir in the flour and tomato paste for 1 minute.
Add the Worcestershire, thyme, broth, remaining salt, and pepper and simmer until thick, about 15 minutes; stir in the peas.
Heat the oven to 400°F (200°C), spread the filling in a baking dish, top with the mash, and rough up the surface with a fork.
Bake until golden and bubbling, about 25 minutes.
