A quick dough of flour, baking powder, a little sugar, cold butter, and milk is patted out, cut into rounds, brushed with egg, and baked until risen and golden. They are split while warm and spread with butter. Jam and clotted cream, the usual accompaniments, are not included.

Ingredients

  • 350 gAll-purpose flourBuy 1 bag
  • 1 tbspBaking powderBuy 1 can
  • 3 tbspGranulated sugarBuy 1 bag
  • ½ tspTable saltBuy 1 canister
  • 85 gUnsalted buttercold, cubedBuy 1 package
  • ¾ cupWhole milkcoldBuy 1 carton
  • 1Eggs (large)beaten, for glazingBuy 1 carton
  • 60 gUnsalted buttersoftened, for serving

Method

  1. Heat the oven to 425°F (220°C) and line a baking sheet with baking paper.

  2. Whisk the flour, baking powder, sugar, and salt, then rub in the cold butter until it looks like fine crumbs.

  3. Add the milk and mix with a knife just until a soft dough forms.

  4. Pat the dough out on a floured surface to about 2.5 cm thick and cut out rounds with a 6 cm cutter, pressing straight down; re-pat the scraps once.

  5. Set the scones close together on the sheet, brush the tops with beaten egg, and bake until risen and golden, 12 to 15 minutes.

  6. Cool briefly on a rack and serve warm, split and spread with butter.
