A home-style shortcut: store-bought beef broth is simmered with charred onion and ginger, star anise, cinnamon, and cloves and seasoned with fish sauce, then poured boiling over flat rice noodles and paper-thin raw beef, which cooks in the bowl. Served with Thai basil, cilantro, lime, and sliced jalapeño; bean sprouts are optional.

Method
Char the onion halves and ginger in a dry pan or under the broiler until blackened in spots.
Toast the star anise, cinnamon, and cloves in a large pot for 1 minute, then add the broth, 2 cups water, onion, and ginger; simmer gently for 45 minutes.
Strain the broth and season it with the fish sauce and sugar; keep it at a rolling boil.
Soak or cook the rice noodles according to the package and divide among large bowls.
Lay the raw beef slices over the noodles and ladle the boiling broth on top so the beef cooks.
Serve with Thai basil, cilantro, lime wedges, and jalapeño, plus bean sprouts, hoisin, and sriracha if using.
