Substitution

  1. Lime in place of “Calamansi”. Lime replaces calamansi, which is not a canonical ingredient ('calamansi' returned no products at the reference store); lime is sharper and lacks the orange-like fragrance.

Method

  1. Soak the noodles in warm water for 10 minutes and drain.

  2. Heat the oil in a wok or wide pan, cook the onion and garlic until fragrant, then add the chicken and stir-fry until no longer pink.

  3. Add the carrot, green beans, and celery and stir-fry 2 minutes, then the cabbage for 1 minute more; move half of the vegetables to a plate.

  4. Pour in the broth, soy sauce, oyster sauce, and pepper and bring to a boil.

  5. Add the noodles and toss until they absorb the liquid and soften, about 4 minutes.

  6. Return the reserved vegetables, toss, and serve with lime wedges and green onions if using.
