Pad Kra Pao

Ground pork is stir-fried hard with garlic and chile, seasoned with oyster sauce, soy sauce, fish sauce, and sugar, and finished with a big handful of basil, then served over jasmine rice with a crisp-edged fried egg. Thai basil stands in for holy basil (it is sweeter and more anise-like) and serrano for Thai bird's eye chiles.

Substitutions
- Serrano peppers in place of “Thai bird's eye chiles, 4”. Serrano peppers, stated by weight, replace Thai bird's eye chiles, which are unpriced at the reference store; they give similar fresh heat, a little milder.
- Thai basil in place of “Holy basil (bai kaphrao)”. Thai basil replaces holy basil, which is not a canonical ingredient; Thai basil is sweeter and more anise-like than the peppery holy basil.
Method
Cook the jasmine rice according to its package directions.
Fry the eggs in 3 tbsp hot oil, spooning oil over the whites until the edges are crisp; set aside.
In the remaining oil, stir-fry the garlic and chiles over high heat for 20 seconds.
Add the pork and stir-fry, breaking it up, until browned and slightly crisp, about 5 minutes.
Add the oyster sauce, soy sauce, fish sauce, and sugar and toss for 1 minute, then stir in the basil until just wilted.
Serve over rice topped with a fried egg.
