Green pepper and grated tomato are cooked down in olive oil until jammy, then eggs are stirred in gently and cooked until softly set.
Ingredients
- 2 tbspExtra virgin olive oilBuy 1 bottle
- 1Green bell pepper1chopped
- 300 gRoma tomatoesgrated or finely choppedBuy 0.67 lb
- 4Eggs (large)lightly beatenBuy 1 carton
- ½ tspTable saltBuy 1 canister
- ¼ tspCrushed red pepper flakesBuy 1 jar
- 2 tbspFlat-leaf parsley (optional)chopped, for garnishBuy 1 bunch
Substitution
- Green bell pepper in place of “Turkish sivri peppers”. Green bell pepper is used because sivri peppers are not a canonical ingredient; it is milder and thicker-walled.
Method
Heat the olive oil in a skillet and cook the green pepper until soft, about 5 minutes.
Add the tomatoes and salt and cook until most of the liquid evaporates, about 8 minutes.
Pour in the eggs and stir gently over low heat until softly set.
Sprinkle with chili flakes and parsley if using and serve immediately.
