İzgara Köfte

Ground beef and lamb are kneaded with grated onion, garlic, parsley, breadcrumbs, cumin, paprika, and red pepper flakes, shaped into small flat köfte, and grilled or pan-seared, then served with sliced red onion, parsley, and lemon. Crushed red pepper flakes stand in for Turkish pul biber.

Substitution
- Crushed red pepper flakes in place of “Turkish pul biber (Aleppo-style pepper flakes)”. Crushed red pepper flakes are used because pul biber is not a canonical ingredient; they are hotter and less fruity.
Method
Knead the beef, lamb, onion, garlic, parsley, breadcrumbs, cumin, paprika, pepper flakes, salt, and black pepper for 3 minutes until sticky; chill 20 minutes.
Shape into 16 small oval patties about 1.5 cm thick.
Grill or sear in an oiled pan over high heat until browned and cooked through, about 3 minutes per side.
Serve with sliced red onion, extra parsley, and lemon wedges.
