Method

  1. Stir the parsley, garlic, oregano, pepper flakes, vinegar, olive oil, black pepper, and 1/2 tsp of the salt together and let the chimichurri stand at least 20 minutes.

  2. Season the steak with the remaining salt and let it lose its chill while the grill heats.

  3. Grill over high heat for 5 to 6 minutes per side, to 130°F (54°C) for medium-rare.

  4. Rest 10 minutes, slice thinly across the grain, and serve with the chimichurri spooned over.
