Wedges of ripe tomato, thick slices of cucumber, rings of green pepper and red onion, and Kalamata olives are topped with a slab of feta, seasoned with dried oregano and salt, and dressed generously with olive oil. There is no lettuce.

Ingredients

  • 600 gRoma tomatoescut into wedgesBuy 1.33 lb
  • 1Cucumberthickly sliced
  • ½Red onionthinly sliced into ringsBuy 0.22 lb
  • 1Green bell peppersliced into rings
  • ½ cupKalamata olivesBuy 1 jar
  • 200 gFeta cheeseone slabBuy 1 package
  • 1 tspDried oreganoBuy 1 jar
  • ¼ cupExtra virgin olive oilBuy 1 bottle
  • ¼ tspTable saltBuy 1 canister
  • 1 tbspRed wine vinegar (optional)Buy 1 bottle

Method

  1. Arrange the tomatoes, cucumber, onion, and green pepper in a wide bowl and season lightly with salt.

  2. Scatter over the olives and lay the feta on top in one piece.

  3. Sprinkle everything with the oregano, drizzle generously with olive oil (and a little vinegar if you like), and serve at once.
