Method

  1. Heat the oil in a wide pan and cook the onion until soft, then add the garlic, ginger, chile, and curry powder and cook 1 minute.

  2. Add the bell peppers and carrots and cook, stirring, until they begin to soften, about 8 minutes.

  3. Stir in the tomatoes, salt, and pepper and simmer until they break down, about 10 minutes.

  4. Add the baked beans and simmer 5 minutes more until thick; serve warm or at room temperature.
