Chicken drumsticks are simmered with onion, carrot, garlic, red pepper, cumin, and oregano, then potatoes, large pieces of squash, rounds of corn on the cob, green beans, and a little rice are added. Each bowl gets a piece of chicken, a potato, a piece of squash, and corn, with plenty of broth and chopped cilantro.

Substitution

  1. Butternut squash in place of “Zapallo (Chilean winter squash)”. Butternut squash replaces zapallo, which is not a canonical ingredient; both are dense, orange winter squashes that hold their shape in the soup.

Method

  1. Heat the oil in a large pot and brown the drumsticks on all sides; set them aside.

  2. Cook the onion, carrots, garlic, and red pepper in the same pot until soft, then stir in the cumin and oregano.

  3. Return the chicken, add the broth, 4 cups water, the salt, and the pepper, and simmer, covered, for 20 minutes.

  4. Add the potatoes and squash and simmer 10 minutes, then add the corn, green beans, and rice and simmer until everything is tender, about 15 minutes more.

  5. Taste for salt and serve each bowl with a drumstick, a potato half, squash, corn, and broth, topped with cilantro.
