Sweetened condensed milk is cooked with cocoa powder and butter, stirring constantly, until it thickens and pulls away from the pan, then cooled, rolled into small balls, and coated. Finely chopped semi-sweet chocolate is used in place of chocolate sprinkles (granulado), which are not a canonical ingredient, so the coating is coarser.

Substitution

  1. Semi-sweet chocolate chips in place of “Chocolate sprinkles (granulado)”. Finely chopped semi-sweet chocolate chips replace chocolate sprinkles, which are not a canonical ingredient; the coating is coarser and less even.

Method

  1. Put the condensed milk, cocoa, and butter in a heavy nonstick saucepan and whisk until smooth.

  2. Cook over medium-low heat, stirring constantly with a spatula, until the mixture is thick and glossy and slides away from the bottom of the pan in one mass, 10 to 15 minutes.

  3. Scrape into a buttered dish, cool, then chill until firm enough to shape, about 1 hour.

  4. With lightly buttered hands, roll heaping teaspoons into balls, roll each in the chopped chocolate, and set them in small paper cups.
