Substitutions

  1. Apricot preserves in place of “Fruit chutney (such as peach or mango chutney), 3 tbsp”. Apricot preserves replace fruit chutney, which is not a canonical ingredient ('mango chutney' returned no products at the reference store); the preserves are sweeter and less tangy, so lemon juice is kept.
  2. Plain breadcrumbs in place of “White bread, 1 thick slice soaked in milk”. Plain breadcrumbs soaked in milk replace the slice of white bread; both only bind and soften the meat, and sliced bread is not a canonical ingredient.

Method

  1. Heat the oven to 350°F (175°C) and soak the breadcrumbs in 1/4 cup of the milk.

  2. Cook the onions in the oil until soft and golden, add the garlic, curry powder, and turmeric for 1 minute, then add the beef and cook, breaking it up, until no longer pink.

  3. Off the heat, stir in the soaked crumbs, apricot preserves, raisins, lemon juice, almonds if using, salt, pepper, and 1 beaten egg; spread in a 23 x 33 cm baking dish and smooth the top.

  4. Beat the remaining 2 eggs with the remaining 1 cup milk and a pinch of salt, pour over the meat, and tuck in the bay leaves.

  5. Bake until the custard is set and golden, 35 to 40 minutes; meanwhile cook the rice according to its package directions.

  6. Rest 10 minutes and serve with the rice.
