Bò Lúc Lắc

Cubes of sirloin marinated in garlic, oyster sauce, soy sauce, fish sauce, sugar, and black pepper are seared in a very hot pan, shaken so they brown on all sides (the name refers to the shaking), and finished with butter and red onion. The beef is served on lettuce and tomato with a dip of lime juice, salt, and pepper, and usually with rice.

- 1Romaine lettuceleaves separated

- 2Limejuiced, for the dip

Method
Toss the beef with half the garlic, the oyster sauce, soy sauce, fish sauce, sugar, and 1/2 tsp pepper and marinate for 20 minutes; cook the rice now if serving it.
Arrange the lettuce and tomato on a platter.
Heat a large skillet or wok until smoking, add 2 tbsp oil and the beef in one layer, and sear without moving for 1 minute, then shake the pan to brown the other sides, 2 to 3 minutes in all for medium-rare; cook in batches if needed.
Push the beef aside, add the remaining oil, the red onion, and the rest of the garlic, cook 1 minute, then add the butter and shake everything together.
Tip the beef onto the lettuce and tomato.
Mix the lime juice with the salt and remaining pepper in small dishes for dipping, and serve with rice.
