Bibimbap

Warm short-grain rice is topped with separately seasoned spinach, carrot, zucchini, and shiitake, soy-marinated beef, and a fried egg, then mixed at the table with a sweet-spicy gochujang and sesame sauce.

- 3 tbspToasted sesame oildividedBuy 1 bottle
- 10 ozSpinachone package, blanchedBuy 1 package

Method
Cook the rice according to its package directions.
Toss the beef with 2 tbsp soy sauce, 1 tbsp sugar, half the garlic, and 1 tbsp sesame oil; set aside.
Squeeze the blanched spinach dry and season it with 1 tsp sesame oil, a little garlic, and salt; season the bean sprouts the same way if using.
Stir-fry the carrot, zucchini, and mushrooms separately in a little oil with a pinch of salt until just tender; season the mushrooms with 1 tbsp soy sauce.
Stir-fry the beef over high heat until browned, then fry the eggs sunny side up.
Mix the gochujang with the remaining sugar, the remaining sesame oil, and 1 tbsp water for the sauce.
Divide the rice among bowls, arrange the vegetables and beef on top, add an egg, sprinkle with sesame seeds, and serve with the sauce to mix in.
